English Breakfast tea

Singapore - After reading about tea, I wondered what is English breakfast tea.  Doing some research, English Breakfast tea is actually black tea but the English likes to drink their tea with milk and sugar.   I love to drink without either - that is the way tea is to be drunk.

There is the Earl Grey Tea - is a tea blend with a distinctive flavour and aroma derived from the addition of oil extracted from the rind of the bergamot orange, a fragrant citrus fruit.

My favourite drink - Tea

Singapore - Tea is recognized as the 2nd most consumed beverage behind water.  Tea was first discovered by the Chinese in 2737 BC and has always been recognised for its purifying and fortifying qualities.  It also clears the mind.   I try to drink this everyday and everytime a request is made 'what would you like to drink?' - it will always be tea. 

Strangely though there are many types of tea, it is basically the drying and processing of only ONE species of plant called camellia sinensis.  Herbal teas or herbal infusions are not really tea, but simply dried leaves and flowers of various other plants and herbs.

Even though all teas come from only one species, there are 3 major variety: 
The China (small leaves and generally thrives at higher altitudes);
the India or Assam (small leaves and generally thrives at lower altitudes) and
the Hybrid (in-between the Chinese and Indian).

Tea making is an art - the processing of camellia's leaves into tea.  It is where many of the subtleties in taste, body, and overall character are created.  In its most basic form, it is taking the raw green leaves and deciding whether or not, and how much oxidation (or fermentation) should take place before drying them out.  Tea leaves have enzymes in their veins.  When the leaf is broken, bruised or crushed, the enzymes are exposed to the air resulting in oxidation.  The amount of oxidation depends upon how much of the enzymes are exposed and for how long.

There are four methods of processing and each produces a different type of tea.  These are White tea, Green Tea, Black Tea and Oolong Tea.

White Tea is nothing more than the leaves of the camellia sinensis that have been processed a certain way.  It is the least common of the four types of teas.  White teas are the least processed of any tea and therefore taste the most like fresh leaves or grass.  They also have the lowest amount of caffeine and most likely the highest antioxidant properties.

Green Tea, like white tea is closer to tasting like fresh leaves or grass hand the black or oolong.  They are also lower in caffeine and have higher antioxidant properties.  The processing of green tea is similiar to white tea in that it does not oxidize.  After the leaves are plucked, they are laid out to wither for about 8-24 hrs.  This lets most of the water evaporates.  Then to neutralize the enxymes thus preventing oxidation, the leaves are steamed or pan fried.  Next, the leaves are rolled up in various ways and a final drying takes place.  Since no oxidation took place, the tea has more of a green appearance.

Black Tea, are the most consumed of the  4 types of teas.  They are the highest in caffeine but still have antioxidant properties, the lowest of the four.  After the tea leaves are laid out to wither for about 8-24 hrs,  this lets most of the water evaporate.  Then, the difference is that the leaves are rolled in order to cracked up the surface so that oxygen will react with the enzymes and begin the oxidation process.  The leaves are left to completely oxidize, thus turning the leaves to a deep black colour.  After that, a final drying takes place.

Oolong Teas are the most difficult of the 4 types to process.  The best way to describe oolong tea is that they are somewhere in between green and black tea.  This is because they are only partially oxidized during the processing.  The processing of oolong tea requires only a partial oxidation of the leaves.  After the leaves are plucked, they are laid out to wither for about 8 to 24 hrs.  This lets most of the water evaporate.  Then the leaves are tossed in baskets in order to bruise the edges of the leaves.  This bruising only cause the leaves to partially oxidize because only a portion of the enzymes are exposed to air.  Next, the leaves are steamed in order to neutralize the enzymes and stop any oxidization.   After that, a final drying takes place and then to to be sorted, graded and packaged.

Beware of your location...

Singapore - Whenever I travel, my iphone has been a blessing - snaping photos of places unique and interesting.   This is until I read an article that taking photos on iPhone can divulge more information that I really want to.

According to CNet, pictures taken with the newer generation of cell phones can reveal your exact location through a technology known as geotagging.  The geographical location of where photos were taken - in the form of latitutude and longitude coordinates - is encoded, and anyone who has a copy of the photos can access this information.

When posted on the social networking website or blogs, the photos - with the geographical coordinates analysed - can reveal such information as where you live, who you live with, who you go out with and your commuting patterns.

The location information is encoded in the Exif metadata of photos.  Metadata is a term for the description information embedded inside an image or another type of file.  The metadata capture by your camera is call Exif data, which stands for Exchangeable Image File Format.  Most digital photo software can display Exif information to users, but it is usually not editable.

Indonesia Food

Jakarta - Going out for Lunch can be a big hassle because of the heavy traffic jam especially along Sudirman Rd.   Finally we reach Pacific Place - this is a classy mall with Ritz Calton Hotel beside it.  Ritz Calton has 2 luxury class hotels in Jakarta - One is located at Mega Kuningan district called Ritz Calton Jakarta (which got bombed by terrorist) and the other at Pacific Place.   The Ritz Calton Hotel and JW Mariott located at Mega Kuningan is around the Embassy street.

I just checked the price for Ritz Calton Pacific Place and it's around USD 300 per night - wow very expensive.

Lunch was at the Linkway half way between Pacific Place and Jakarta Stock Exchange Building - a Sundanese restaurant - Dapur Sunda - B1 # 17.   I like Sundanese food and enjoyed it very much - Gurame Goreng, Gurame Bakar and Kangkong chili.  One of the best known restaurant in Jakarta and have many branches around Jakarta.

One of the dish was 'pete' which is Soya Bean but this is raw and I did not like the taste.  I prefer it cooked like Edamame (Japanese soya bean pods boiled in water with salt) - taste so much nicer.

For Dinner, we went to Plaza Setiabudi for Japanese food and the restaurant is Takigawa.  Takigawa restaurant website states Japanese fusion.  From my experience, there are few Japanese restaurant outside of Japanese that meet the stringent quality and taste.   I am very particular when it comes to food.   Since it was suggested my another vendor, I just went along  but very sceptical.   The photos on the menu does not look apetitizing and there were few choices that I would choose.    So, I decided to go for the same dish which hardly any restaurant should get it wrong - Tenzaru Soba - Japanese cold soba noodles with Ebi Tempura.  'Sorry Sir, this dish not available - no prawns for today.' 

So I chose Japanese Cold Soba and Unagai (Eel) - the dish was OK.   My other customers ordered Sushi, Volcano (Fusion sushi -  salmon, scallop, crabstick, prawn, carrot, glazed with the house special sauce and tobiko) and Katsu.  

The Sushi has a strong vinegar taste on the rice.
Volcano - when it came does not look appetizing but I still tried it and that will be my last time.   It has a weird combination.
Katsu - I love Katsu and it is always the dish I would eat when I arrive in Tokyo but it's pork.  In this restaurant, pork is not allowed so they replaced with tuna and chicken.   The chicken meat is too tough and not juicy - it was unprofessionally done as if I would have done it at home.  lol....

In Japan, the Katsu - when you bite the pork katsu, the meat is still succulent and juicy.   I was told by Terry that there are lots of preparatory work that goes into making a very good Katsu - the meat cannot be frozen and it has to be chilled at a right temperature.

My experience proves me right....

Chinese Food in Jakarta

Jakarta - Upon arrival at the Jakarta airport, I walked past what looks like immigration for 'Foreigners' but thought nothing of it.  When I reached the usual immigration counters, I was puzzled as all the signs overhead read 'Indonesian' and I thought there must be some error.  Until I heard a Immigration officer shouted 'Foreigners' up there.  I looked and this officer was pointing back to where I just walked past.   I had to walk back a few metres to the location and there were immigration counters with signs overhead that read 'Foreigners'.

Once I cleared immigration, got into a taxi limousine and the ride took about 1hr to each Le Meridien Jakarta Hotel.   There were traffic jams once we start entering the outkirts of Jakarta.   I was told by my driver that 'Golden Bird' are the black mercedes car with black license plate with any taxi sign and it looks like a private car.   'Silver Bird' is metred black mercedes car with yellow license plate with a Silver Bird taxi sign over the taxi roof top.  'Blue Bird' is the normal metred taxi.   All 3 belows to the Blue Bird company.  I understand also from him that there is a 'Sapphire Bird' a  much bigger MPV with overhead TV and much bigger space.

I had lunch with my customers at Satay House Senayan - a very popular Indonesian Satay restaurant that specializes in all types of Satay.   This branch is within a mall called Citywalk Sudirman

Dinner was at a chinese restaurant with 4 branches in Singapore - Pu Tien Restaurant.   I have not been to any one of them in Singapore.

No, it is not some alien food but fried 'Man Tow' and in the centre of the dish is stir fried chicked.  You are supposed to stuff the stir fried chicken into the 'Man Tow' and eat it like a sandwich.  In Singapore, we have 'Man Tow' to dip into the Chilli Crabs.   The 2 dishes of crabs are so delicious and each dish cost Rp210,000.

A Superfast Korea

Seoul - South Korea boast the world's fastest Internet connections - the fastest globally by far - but that is still not good enough for the government.

The country intends to connect every home in the country to the Internet at one gigabit per second by the end of 2012.  That woud be a ten fold increase from its already blazing national standard today and that is more than 200 times as fast as the average household setup in the United States.

The South Korean average internet connections are far faster than those in Hong Kong, which is ranked No.2 in the world, and Japan at No. 3.  South Korea cities also hold the top 11 spots worldwide for Internet connection speed, with four Japanese cities rounding out the top 15.  Hong Kong ranks 46th over all.  The US city with the fastest Internet speed is San Jose, California in 57th place.

This is amazing that South Korea was once poorer than North Korea, and is now the world's 13th largest economy.  It recovered from the ravages of the Korean War by yoking its economy to heavy industries like cars, steel, shipbuilding and construction.  

A lot of South Koreas are early adopters and the fast speed is needed for 3-D TV, Internet Protocol TV, High definition multi-media, gaming and video conferencing, ultra high-definition TV, cloud computing.

Tour Boat in Halong Bay sank - kills 12

Singapore - I was there with my family in December and we had good fun and memories.   Unfortunately, on February 17 early morning, one of the many Tour boat plying Halong Bay sank and killed 12 people.

I read so much about Halong Bay and being a UNESCO site, I wanted to bring my family there.  But when I researched over the Internet - there were so many companies plying their tours and which do I choose.   Prices range from the low of US$75 to the high of US$300.     But the best advice is to read the forums and my best was TripAdvisor.  

The forumers gave lots of tips but you also have to do your own research,  There were so many horror stories which you can spend hours crawling the tripadvior website or even the Internet.  

But finally I decided on the Best Halong Bay Operator because,
- Their Junks are very new,
- Indo China Junks have exclusive routes (not croweded),
- Kayaking cost is included
- The kayak operators only served Indo China junks
- Transfer transport (to and fro Hanoi) is managed by Indochina Junk (some operators out source to 3rd party which they do not have control).

WiFi Woes..ouch!!

Bangalore - I had a harrowing time in getting onto the Internet.  It started in the Hotel room when the network went down.   So, the Hotel sent their technican to my room to fix the problem.  The technician tried all the ususal keys and it does not work.  I told him that their server is down.  Show him that I am not able to ping to http://www.google.com/.

He went back fixed the problem and for a short time it work and then it went down again.   Throughout my stay, I was not able to use VPN at all.  Tired everything but to no avail.

So, quite pissed I called front desk and told them that I am not able to get onto the internet and I have already paid for it - 'No problem, sir.  We will not bill you'.

Hotel woes => no Internet and cannot use VPN.

Hmmm, maybe if I go to the Airport and sit in the lounge I can get access.  Arrived about 2.5 hrs earlier - sat in the Lounge, it is only free for 15 minutes.  So, after 15 minutes - Tata Indicom will charge INR 100 for 1hr and they accept credit card.   So OK, I entered my credit details, and went through all the process but was not approved.  

There is a number to call - everytime the phone rings, it hangs up! 

Got the Lounge customer service to help me call Tata Indicom, managed to do so and I spoke to the help desk and he will call back to the Lounge after investigating.   I do not want Tata Indicom to bill me when I did not use their services at all.   The call back and  to my surprise - the bank which Tata Indicom used as a credit card gateway does not accept International credit card.

Airport woes => No Internet after 15 minues and cannot accept International credit card.

What a wired city !!!

Bangalore - After having breakfast, VN driver picked me up to his office.   Look how dangerous it is to hang perilously outside the bus.  Obviously to me, the bus fare is free since there is no seat for him but he has to hang on for his dear life.

Bangalore during Winter

Bangalore - When I arrived, there was the Hotel taxi waiting for me and we left the airport @ 10:22pm but in Singapore it is already 12:52am (that is 2.5 hrs behind).   There are many touts for illegal taxi - AVOID at all costs.  There are authorized taxis that will bring you to your destination otherwise get the Hotel to fetch you.

On the plane, I finally watch the movie RED (Retired and Extremely Dangerous).   Starring old folks in an action movie.  Solid casts - more laughable than action but I still enjoyed it.

As I am still wide awake.  I decided to watch another movie - CONVICTION.  This is a true story of a sister that puts herself through Law School to get her innocent brother out of prison.  She succeeded after 20 years.

From the airport, it was a straight road with cars honking at one another.  My driver was driving in and out at around 80km/hr and at times 110km/hr.   He was driving a Chevy of a model which I do not recognize.  In Bangalore, hailing a taxi from the main road can be rare and it is advisable to book a taxi.   

After I checked into Le Meridien Hotel, and much settled in and watching a movie on my notebook.  I got a shocked when sometime open my door but fortunately I had the latched on.   Looking through the eye hole, it was a Chinese looking lady with a trolley bag - I complaint to the front desk.   This was the first time it happended to me.  

Le Meridien Hotel apologized and gave me a Red Wine as a token of apology.
